MENU 1 : The Royal Meal of Tangpyeong

The Royal Meal of Tangpyeong was made based on the royal meal of King Jeong-jo. King Jeong-jo grieved over various domestic matters, from the people’s daily life circumstances to extensive natural disasters. Feeling responsible for the people’s sufferings, he tried to ease their suffering by reducing the amount of meat in his meals, as well as the number of side dishes.

Like his attempt of equal recruitment through the Tangpyeong Policy, King Jeong-jo practiced virtue by reducing his own luxurious meals with the idea of equality and balance. Reflecting King Jeong-jo’s heart, the Royal Meal of Tangpyeong is a meal harmoniously composed of various ingredients and balanced nutrition.

    It is a North Korean style bulgogi that serves barbecued beef shoulder with winter-grown dried radish leaves simmered with perilla seed sauce.
    Cooked with special sauce made by Hyojeong Yeon’s premium soy sauce, the tender beef provides a simple, but rich flavor.
    When winter-grown dried radish leaves, sauteed in perilla seed sauce, are served with the bulgogi, the fragrance of perilla seed, combined with the rich flavor of soy sauce, creates a premium taste.

    Royal steamed chicken is made with a royal recipe, which cooks chicken with ingredients for oriental medicine, such as gingseng, astragalus membranaceus, jujube, sarcodon imbricatus, shiitake mushroom, pine mushroom, etc.
    Steamed in a pressure cooker with various ingredients of oriental medicine, the chicken thigh loses its particular smell, and the meat gets soft. The rich and deep flavor of the chicken is realized by cooking it in soy sauce one more time.

    It is a refreshingly spicy dish of stir-fried octopus with seasoned gourd and bamboo shoot with chili pepper.
    The sweet cooking rice wine unique to Hyojeong Yeon conceals the smell of octopus, and softens its flesh. The octopus is cooked with crispy bamboo shoots and gourds that are lightly boiled. In order to mask the stale taste, it is flavored only with chili pepper instead of red chili paste. It has a simple and refreshing taste.

MENU 2 : The Royal Meal of True Love

The Royal Meal of True Love is a royal meal designed based on the idea of True Parents’ love. True Parents have walked the path of providence with True Love, and have always thought of God, the world, the nation and the church members.

For the sake of Heaven, Earth, the world and humanity, True Parents have travelled everywhere, north or south, and have run without rest by pouring blood, sweat and tears with One Heart, One Body and One Mind. Standing side-by-side with the church members who have worked in the front line of providence, True Parents have always favored simple and humble meals. The Royal Meal of True Love consists of such heart as the heart of the True Parents.

It is a royal meal served with various ingredients savored by the True Parents. It helps the members inherit True Parents’ heart, nurtures their proper eating habits and enhances their health.

    True Parents enjoyed this dish when they were tired from tight schedules, and needed to energize their mind and body. This dish cooks cattle rumen, known for its efficiency in recovering people’s vitality and health, with perilla leaves and perilla powder.
    Cattle rumen is boiled after washing it with solar salt up to three times. It is then stir-fried with Hyojeong Yeon’s sweet cooking rice wine, onion and spring onion, to clear away its odors. Perilla leaves and perilla powder add harmonious flavor to the dish.

    This dish uses salmon, the ingredient True Parents favored to eat when they traveled in far-flung cultural areas, from east to west.
    The salmon is grilled on the surface until crispy. Then, it is coated with sauce and grilled again in the oven until the inside is cooked tenderly. The Hyojeong Yeon’s original Aioli sauce, which is ripened for three days, brings out the flavor of the salmon. The dish is enjoyed with fresh vegetables of the season.

    Mugom is a traditional food of the North Pyongan Province. Beef or pork is simmered in soy sauce with dried radish greens and chili pepper.
    True Father occasionally enjoyed this dish as he thought of his hometown in Jeongju of the North Pyongan Province. With Hyojeong Yeon’s original cuisine, soup stock is made of sardine from the sea of Sokcho in the Gangwon Province after stir-fried for two hours. The flavor of the original ingredients are brought out as they are cooked in the soup stock. It is also perfectly nutritious.

MENU 3 : The Royal Meal of Hun Min

The Royal Meal of Hun Min was prepared based on the meat-oriented royal meal favored by King Sejong, who held a strong interest in the circumstance of the nation and the life of the people, and took action accordingly.

Since King Sejong absorbed a great amount of physical and mental energy, due to his numerous activities, he requested meat-oriented dishes for each meal.

HyojeongYeon’s Royal Meal of Hun Min is a royal meal which includes ingredients that can recuperate mental energy and recover physical energy by emulating King Sejong’s eating habits.

    This dish brings out the original flavor of octopus, abalone and pork, which are effective for recovery of spirit and energy. You can enjoy the simple and healthy taste of the ingredients by eating it with the spicily-seasoned salted cucumber, bellflower root and ginseng root hair served with the dish.
    The boiled pork, one of the main ingredients, is cooked after draining blood for 12 hours. The pork, octopus and abalone are then heated under vacuum at 66℃ for 24 hours with wild honey and thinly-sliced radish, in order to prevent moisture loss.
